Sautéed and Roasted Chicken Breasts

Ingredients
- 1 ea. Chicken Breast (skin on)
- 3 ea. Fresh Thyme Sprigs
- 1 ea. Garlic Clove, smashed
- 4 ea. Peppercorns
- 2 Tbl. Olive Oil
- Salt & Pepper to taste
Method
- Preheat oven to 400ºF.
- Marinade Chicken with thyme sprigs, crushed garlic and peppercorns for 12 hours. When ready to cook, remove herbs, garlic and peppercorns. Season Chicken Breast with salt and pepper.
- In a medium-sized oven-proof pan that has been heated, add 2 tablespoons of olive oil and sauté Chicken Breast skin side down on medium high heat.
- Once skin becomes golden brown, put pan in oven and roast until almost cooked. Remove from oven and flip.
- Let rest 8 minutes before carving. Carve at plate up with a slicer skin side down.
When you think of a roasted chicken, what’s the first thing that comes to mind? Crispy skin, juicy meat, the freshness of the aromatics. It all comes together in harmony that is incredible and hard to beat. While this technique seems simple, the hardest part is having the patience and the preparation to do it right. To understand what it takes to achieve this technique several steps need to be accounted for. Such as, the proper marinade, the correct heat of the pan, making sure the skin is covering all the breast, and proper seasoning. All these together will give you a chicken that blow away anyone with its taste. This technique excites me because of how amazing something can be when the steps are done right.
